Cashew Apple the way we eat
This is called either Cashew Apple or “Kaju puhulan” and has been a super yummy food among village children. The fruiting season starts in April and during Sinhala and Tamil New year festival season, this fruit is an inseparable fruit from their hands.
Cashew apple we come across are in two colors which are either red or yellow.
Though the taste wise both have no distinguishable difference. We entertain eating the fruit as it is having plucked from the tree or either by making it a salad.
We remove the cashew nut and cut the cashew apple in to halves. Then add pepper and the salt to that and mix. The mouth watering taste is in every village child’s mind lasting forever. The ripen cashew apple has a distinct aroma and flavor to it.
What ‘s about the immature cashew nut
The immature cashew nut curry is one of the tastiest village food one can have in his life time. When it comes to the harvesting stage, both nut and the cashew fruit are green in color and also when the fruit becomes relatively little larger. At that stage,the green nuts are split in to halves and remove the flesh . Then boil it to remove the oil from the nuts.

Burnt cashew is so delicious
You might not have eaten burnt cashew. Though many village Sri Lankan people do not have missed this crispy buttery food. So, thought it is good to write a few words to you about this as well.
Very simply set fire to cashew nuts with dried coconut leaves. No matter what the leaves you use for setting fire but as a practice and as very much abundant substance in the village, villagers use coconut leaves.
You see the color of the nuts appear in grey color but when burnt, this color changes to completely dark black.
Here we go. Now we have set fire to the cashew nuts and have to let it be for about 2-3 minutes. When burning it makes the sound whooo…. like whistle as the oil is burnt.
After you have to turn the cashew other side if not they will not burn perfectly.
They have burnt so well. Now it is the time to get the tasty nut inside of this.Now it is splitting time.
Like coconut leaves, coconut shells are also abundant in villages. So for splitting the nuts, we have coconut shelves. Ultimately this beautifully burnt cashew will be in your hand.
From our childhoods, we have been enjoying this for years.We are waiting for the new year season to get this. You just need to remove the outer skin and put in to your mouth.
Village women use this burnt cashew for making number of numerous recipes of sweets such like “Aluwa”, “Dodol”.
