What are anti nutrients in mung beans ?
Mung beans and all kind of beans contains anti nutrients in them naturally.Anti nutrients are not harmful to the human body but they do not let our body to absorb huge nutrients content present in beans.So even though these anti nutrients are not harmful, it is a wise decision to eat the beans with out them.
The major anti nutrients present in plant foods are phytates, lectins, tannins and oxalates.
How can we minimize the anti nutrients.
Clearly during sprouting, the anti nutrients are broken down by the bean it self in order to make the huge nutrients available for the growing little plant to utilize.
Another method is boiling and cooking, the heat that affect on beans cause for these plant chemicals to break down.
Soaking the mung beans and other beans before taking for the consumption is also helpful to reduce the plant anti nutrients. There of course the water absorption triggers the sprouting and we consume before it continues to the sprouting stage.
Fermentation is also another method of avoiding plant anti nutrients.
How to make sprouted mung beans at home
It is a very easy to make sprouted mung beans at home.You just need mung beans purchased from the shop.
Put the mung beans in to a container.Then add water to that.Allow to stand for a few hours to soak.
Then drain off the water.wrap the mung beans with a cloth piece (not tighly) and keep in a dark place.(just cover it to make light can not reach)
Normally within twelve hours you can observe the beans have started sprouting.The little white roots appear.
The more days you keep them, you can observe the nicely grown roots and if you keep them moreover, you will observe the leaves also tend to occur.
